I think this probably won't be fixed. A "graphical copy" is very limited and is an exact copy. So a camera facing label on the original structure will not face forward on a graphical copy rotated 120 degrees for a trimer. In the same way I can't change the colors of graphical copies, or the display styles of graphical copies, it seems reasonable that I can't change the labels from being graphical copies. It's not great, but the complexity of making graphical copies not really be copies, like making labels on the copies not respect the transformations placing the copies, seems like too much. There are many things that aren't going to work for graphical copies -- for example I don't think you can have a pseudobond from one structure to a graphical copy of another structure (except for the first copy). These functional limitations are a tradeoff for better performance (otherwise you use fully functional full copies).
