Hi Domenico,
How to show the MODELLER interface is described in those documentation links I sent.

To summarize, you would start it from the Structure menu in Multalign Viewer, the dialog that shows sequence alignments. IThe top link above describes how to get a sequence alignment if you don't have one already.
However, it is also possible that you didn't get a new enough daily build. Earlier today one of the Mac builds in that table was older than that date, but I see that some more builds have now become available, and now all are new enough (Sept 17 for all platforms):
