Hi Bryan,
You can increase label font size in the Preferences, category: Background. Preferences is at the bottom of the Favorites menu.

Those 3D labels are mainly for interactive use. For a publication image, you might want to use 2D Labels instead (in menu under Tools... Utilities). 2D labels don't move with the structure, so you would first want to settle on the exact view before positioning them.
